Vegetable Stew

The perfect comfort food

- serves 4 -

- 1 peeled and sliced kohlrabi

- 9 peeled and quartered sweet potatoes

- 6 peeled and sliced carrots

- 3 peeled and sliced parsnips

- 2 tins of chickpeas

- 2 peeled and sliced courgette/zucchini

- 3 peeled and cut red onion

- 10 quartered mushrooms

- 4 peeled garlic cloves

- 1/4 cups of hemp seeds

- 2 cups of water

 

 

1. Put all ingredients but the chickpeas and hemp seeds in the pressure cooker and pressure cook for 10 minutes

2. Release the pressure, open the cooker and let cool down

 

3. Add the chickpeas and hemp seeds

4. Put half of the soup in a blender and add a bit of the remaining liquid to make it blend smoother

 

5. Blend until smooth and transfer the mixture back into the cooker

6. Mix thoroughly until preferred consistency is achieved

7. Enjoy!

Notes:

 

As I have been on an SOS-free diet for a while and my taste buds completely adjusted to this way of eating, I do not need salt or any herbs or spices anymore. If you would like to add a bit of salt or herbs/spices to taste, feel free to do that.

You can also add other vegetables such as broccoli, Brussels sprouts, asparagus, white potatoes, or any other vegetable you like. Brown rice fits also very well to this stew.
