Vegetable Stir-Fry With Brown Rice

No SOS needed for creating a tasty meal that makes you happy

- 3 cups of short

- grain brown rice

- 1 chopped courgette/zucchini

- 2 chopped carrots

- 3 sliced red onions

- 1 sliced red bell pepper

- 1 tin chickpeas/garbanzo beans

- 1.5 cups of spinach

- 2 chopped garlic cloves

- 1 tin chopped tomatoes

- 2 tbsp mixed herbs

- 1 tsp coriander

- 1 tsp cumin

- 1/4 tsp chilli powder

- 2 tbsp apple cider vinegar

- 1 lime

 

 

1. Cook the rice according to the package

 

2. Fry the courgette, carrots, red onion, garlic, chickpeas and spinach in a pan

 

3. Put the chopped tomatoes, herbs, apple cider vinegar and lime in a blender and blend until smooth

 

4. Pour the sauce on the vegetables in the pan and simmer for 10 minutes

 

5. Enjoy!
