Potato Stew

Good for gut and heart health

- serves 4 -

 

- 15 medium potatoes

- 0.75l non-dairy milk (e.g. cashew)

- 2 garlic cloves

- 5 tbsp nutritional yeast

- 2 tsp paprika

- 4 tbsp mixed herbs

- 1 tsp ground ginger

- 2 tsp cumin

- 1/2 tsp ground chilli (optional)

 

1. Peel the potatoes and cut them into 5mm thin slices

2. Chop the garlic

3. Mix all herbs and spices plus the garlic with the milk

4.Put everything in a pot and heat it up; as soon as it boils, reduce heat and simmer for 15 minutes or until potatoes are cooked

5. Enjoy!
