Pasta with Chickpea Tomato Sauce

This bowl supports the immune system and keeps you fit and strong

- serves 2 -

 

- 300g corn pasta

Sauce:

- 1 tin chopped tomatoes

- 1 tin chickpeas/garbanzo beans

- 150g sweetcorn

- 2 chopped mushrooms

- 1 chopped carrot

- 1 chopped courgette/zucchini

- 1 chopped yellow bell pepper

- 2 tbsp mixed herbs

- 1 tsp black pepper

- 1/2 bunch fresh parsley

- 1/2 bunch fresh coriander

Toppings:

 

- sesame seeds

 

 

1. Cook the pasta according to the package

 

2. Put all sauce ingredients in a pot and bring to boil; reduce heat and simmer for 10 minutes

 

3. Place pasta on a plate and top with sauce and sesame seeds

 

4. Enjoy!
