Spicy Vegetable Medley

- serves 3 -

 

- 1 tin chickpeas (drained)

- 1 tin chopped tomatoes

- 1 sliced courgette/zucchini

- 1 chopped red bell pepper

- 2 chopped garlic cloves

- 1 chopped red onion

- 3 sliced carrots

- 1 cup of spinach

- 1/2 tbsp curry powder

- 1/2 tsp dill

- 1/2 tsp ground ginger

- 1/2 tsp chilli powder

- 1/2 tsp black pepper

- 2 tbsp mixed herbs

- 1 tsp cumin

 

sides:

- 18 cooked and peeled potaotes

- 1 steamed broccoli

 

1. Put the chickpeas, courgette/zucchini, red bell pepper, carrots, red onion and garlic in a pan and fry them for 10 minutes over a medium heat

 

2. add the chopped tomatoes, herbs and spices and cook for 5 minutes

 

3. add the spinach and cook for a further 5 minutes

 

4. Put the vegetable medley in a bowl, add the potatoes and the broccoli

 

5. Enjoy!
