Healthy Pasta

Gluten-free and full of flavour

- serves 2 -

 

- 300g Corn pasta

- 1 tin chopped tomatoes

- 1/2 tin chickpeas/garbanzo beans

- 150g sweetcorn

- 1 chopped garlic clove

- 1 chopped red onion

- 1/2 diced courgette/zucchini

- 1/2 diced carrot

- 1/2 tsp black pepper

- 1/3 tsp chilli powder

- 3 tsp mixed herbs

- fresh parsley and coriander

1. Cook the pasta according to the package

2. Put courgette, carrot, onion and garlic in a pan and cook for 10 minutes

 

3. Add the tin of tomatoes and the herbs and simmer for 5 minutes

 

4. Mix pasta and sauce

 

5. Enjoy!
