Gemüsepfanne mit Reis

Helps regulate blood pressure and constipation, improves eyesight and boost immunity

- serves 2

 

- 3 cups of cooked rice

- 10 quartered mushrooms

- 1 sliced red bell pepper

- 2 sliced carrots

- 1 diced white onion

- 1 sliced stalk of celery

- 1 diced garlic clove

- 1 sliced courgette

 

Sauce:

 

- 1 tin tomatoes

- 1 tin chickpeas

- 2 tsp dried fennel

- 6 fresh basil leaves

- 1 tsp nutmeg

- 0.5 tsp curry powder

- 1 tsp cumin

- 0.5 tsp dried coriander leaves

- juice of one lime

- 1 peeled and pitted avocado

 

1. Put all sauce ingredients in a blender and blend until smooth

 

2. Put mushrooms, bell pepper, carrots, onion, garlic, celery and courgette in a pan and fry for 10 minutes at medium heat

 

3. Add the sauce and the rice and cook for 10 minutes or until the preferred consistency is reached

 

4. Enjoy!
