Fruit Cake

Sugar-free, dairy-free, wheat-free, gluten-free, quick to make

Dough

 

- 2.5 cups of oat meal

- 1 cup of cashew milk blended with 4 dates

- 1 grated courgette/zucchini

- 8 tbsp aquafaba

 

Toppings

 

- 1 apple

- 250g of blackcurrants

 

1. Put all dough ingredients in a bowl and mix thoroughly

 

2. Preheat the oven to 175ºC

 

3. Pour dough into baking tin and spread evenly

 

4. Top with apple and berries and put in the oven for 20 minutes

 

5. Enjoy!
