Creamy Pasta

- serves 2 -

 

- 350 g pasta

- 1 tin of chickpeas

- 3 cups cashew milk

- 1/2 cup nutritional yeast

- 6 dates

- 15 quartered mushrooms

- 10 halved cherry tomatoes

- 10 chopped fresh basil leaves

 

 

1. Cook pasta according to package directions

 

2. Put chickpeas, milk, nutritional yeast and dates in blender and blend until smooth

 

3. Heat the pan, add 1 tbsp of water and mushrooms and sauté for 2 minutes

 

4. Add pasta, sauce and basil and stir while cooking on medium heat

 

5. Serve immediately with tomatoes when desired creaminess is achieved

 

6. Enjoy!

 

 

Note: This is a basic sauce recipe. In case the pasta tastes bland, add lemon/lime and fresh or dried herbs and spices such as thyme, oregano, parsley, black pepper, cayenne pepper, onion, garlic
