Sweet Potato Millet Balls

Perfect for any fall occasion


- 1 half-cooked middle-sized sweet potato

- 3/4 cup of cooked millet

- 1/4 cup of cooked lentils

- 1 tbsp dried coriander/cilantro

- 1 tsp cumin

- 1 tbsp chopped pecans

1. Place the sweet potato in a bowl and mash it.

2. Add all remaining ingredients and mix thoroughly


3. Form balls the size of a golf ball, place in the air fryer and air fry at 200°C/392°F for about 14 minutes until balls are slightly brown or until slightly crisp on the outside

4. Enjoy!

Notes: if it is too difficult to mash the half-cooked sweet potato, chop it in 2cm large dices before mashing it with a fork; you also don't have to mash it completely but leave smaller pieces and incorporate them in the balls
